In a large bowl, combine the warm water, sugar, and yeast. Stir gently and let it sit for about 5 minutes until the mixture becomes foamy.
Add the melted butter, salt, and flour to the yeast mixture. Stir until a dough forms. Knead the dough on a lightly floured surface for about 10 minutes until it is smooth and elastic.
Place the dough in a lightly greased bowl and cover it with a clean cloth. Let it rise in a warm place for about 1 hour or until it doubles in size.
Once the dough has risen, punch it down to release air. Divide the dough into 8 equal pieces and roll each piece into a long stick shape (about 25 cm in length).

In a large pot, bring 2 liters of water to a boil. Carefully add the baking soda to the boiling water.
Using a slotted spoon, lower each dough stick into the boiling water and boil for about 30 seconds on each side. Remove them with the slotted spoon and place them on the prepared baking sheets.
Sprinkle the boiled dough sticks with coarse salt.
Bake the sticks in the preheated oven for 20-25 minutes or until they are deep brown in color.
