Ingredients

  • 2 sheets Puff pastry sheets
  • 200 grams Cooked ham
  • 150 grams Shredded cheddar cheese
  • 250 grams Frozen spinach, thawed and drained
  • 2 large Eggs
  • 120 milliliters Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.25 teaspoons Nutmeg
  • 2 tablespoons All-purpose flour (for dusting)
  • 1 serving Egg wash (1 egg whisked with 1 tbsp water)

Directions

Step 1

Preheat the oven to 200°C (400°F). Lightly grease a 9-inch pie dish.

Step 2

On a lightly floured surface, roll out one puff pastry sheet and line the prepared pie dish with it, pressing gently into the edges. Trim excess pastry.

Step 3

In a mixing bowl, whisk together eggs, heavy cream, salt, pepper, and nutmeg until well combined.

Step 4

Spread the drained spinach evenly over the pastry base, followed by the chopped ham and shredded cheddar cheese.

Step 5

Pour the egg and cream mixture over the filling, ensuring it is evenly distributed.

Step 6

Roll out the second puff pastry sheet and cut it into long, even strips (about 1/2 inch wide) using a knife or pastry cutter.

Step 7

Lay half of the strips horizontally across the pie and the other half vertically, weaving them into a lattice pattern over the filling. Trim any excess dough.

Step 8

Brush the lattice top and edges with the prepared egg wash for a golden finish.

Step 9

Bake in the preheated oven for 35–40 minutes, or until the pastry is golden brown and the filling is set.

Step 10

Remove from the oven and allow the pie to cool for 10 minutes before slicing and serving.
