  • 12 pieces Lasagna noodles
  • 2 tablespoons Olive oil
  • 1 pound Turkey sausage, casing removed
  • 1 medium Yellow onion, finely chopped
  • 3 cloves Garlic cloves, minced
  • 28 ounces Crushed tomatoes
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • 5 cups Baby spinach
  • 15 ounces Ricotta cheese
  • 1 large Egg
  • 3 cups Grated Parmesan cheese
  • 4 cups Shredded mozzarella cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil. Cook the lasagna noodles according to the package directions until al dente. Drain and set aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the turkey sausage and cook, breaking it up with a wooden spoon, until browned and cooked through, about 5-7 minutes.

Add the chopped onion to the skillet with the turkey sausage and cook until softened, about 4 minutes. Stir in the minced garlic and cook for another 1 minute until fragrant.

Add the crushed tomatoes, tomato paste, dried basil, and dried oregano. Stir to combine and simmer the sauce for 10 minutes, stirring occasionally. Season with salt and pepper.

In a medium mixing bowl, combine the ricotta cheese, egg, 1 cup of Parmesan cheese, and the wilted spinach. Mix until well blended.

In a 9x13-inch baking dish, spread a thin layer of the turkey sausage tomato sauce on the bottom to prevent sticking.

Lay 3-4 lasagna noodles over the sauce, slightly overlapping. Spread 1/3 of the ricotta-spinach mixture over the noodles, then sprinkle with 1 cup of shredded mozzarella. Top with 1/3 of the remaining turkey sausage sauce.

Repeat the layering process (noodles, ricotta-spinach mixture, mozzarella, and sauce) two more times, finishing with the remaining sauce and a generous layer of mozzarella cheese on top.

Sprinkle the remaining 2 cups of Parmesan cheese over the top.

Cover the dish with aluminum foil, making sure the foil does not touch the cheese, and bake for 30 minutes. Then, remove the foil and bake uncovered for an additional 20-25 minutes, or until the cheese is bubbly and golden brown.

Step 13

Remove the lasagna from the oven and allow it to rest for 10-15 minutes before slicing and serving.
