  • 1 can Black beans, drained and rinsed
  • 2 cups Salsa
  • 1 cup Sour cream
  • 2 cups Shredded cheddar cheese
  • 1 cup Shredded pepper jack cheese
  • 6 pieces Flour tortillas, large
  • 0.25 cup Fresh cilantro, chopped (optional for garnish)
  • 0.25 cup Sliced green onions (optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet over medium heat, cook the ground beef until it's browned and fully cooked. Drain excess fat if needed.

Step 3

Add the diced onion and minced garlic to the skillet. Cook for 3-4 minutes until the onion is translucent and fragrant.

Stir in the taco seasoning, black beans, and 1 cup of salsa. Combine well and cook for an additional 2 minutes. Remove from heat and set aside.

In a medium bowl, mix the sour cream, shredded cheddar cheese, and pepper jack cheese together.
