Ingredients

  • 6 Bell peppers (any color)
  • 2 tablespoons Olive oil
  • 1 lb Ground beef
  • 1 Onion, finely diced
  • 3 cloves Garlic, minced
  • 2 cups Marinara sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Ricotta cheese
  • 0.5 cup Grated parmesan cheese
  • 1 Egg
  • 2 cups Shredded mozzarella cheese
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the tops off the bell peppers and remove the seeds and membranes. Lightly brush the inside and outside of the peppers with 1 tablespoon of olive oil and place them upright in a baking dish. Set aside.

Step 3

In a large skillet over medium heat, heat the remaining tablespoon of olive oil. Add the ground beef and cook, breaking it up with a spoon, until browned and fully cooked, about 6-8 minutes.

Step 4

Add the diced onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for another minute.

Step 5

Pour in the marinara sauce, and stir in the Italian seasoning, salt, and black pepper. Let the mixture simmer for 5 minutes, then remove from heat.

In a medium bowl, combine the ricotta cheese, grated parmesan cheese, and egg. Mix until well blended.

Step 7

To assemble, spoon a small amount of the meat sauce into the bottom of each bell pepper. Add a layer of the ricotta mixture, then a layer of shredded mozzarella. Repeat the layers until the peppers are filled, ending with a generous topping of mozzarella cheese.

Step 8

Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

Step 9

Remove from the oven and let the stuffed bell peppers cool for 5 minutes before serving.
