Ingredients

  • 12 pieces Lasagna noodles
  • 2 cups Ricotta cheese
  • 2 cups Shredded mozzarella cheese
  • 0.5 cups Grated Parmesan cheese
  • 3 cups Fresh spinach
  • 1 large Egg
  • 3 cups Marinara sauce
  • 1 clove Clove of garlic (minced)
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Cook the lasagna noodles according to the package instructions until al dente. Drain and lay them flat on a clean kitchen towel to prevent sticking.

Step 3

In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the minced garlic until fragrant, about 1 minute. Add the fresh spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

Step 4

In a large mixing bowl, combine the ricotta cheese, 1 cup of shredded mozzarella, grated Parmesan, cooked spinach (squeeze out any excess moisture if needed), egg, salt, and black pepper. Mix until fully combined.

Spread 1 cup of marinara sauce evenly over the bottom of a 9x13-inch baking dish.

Remove the foil and bake for an additional 10-15 minutes, or until the cheese on top is melted and bubbly.

Remove from the oven and let the lasagna rollups rest for 5 minutes before serving.
