Ingredients

  • 12 pieces Lasagna noodles
  • 2 tablespoons Olive oil
  • 2 cloves Minced garlic
  • 10 ounces Fresh spinach
  • 15 ounces Ricotta cheese
  • 1 large Egg
  • 0.5 cups Grated parmesan cheese
  • 2 cups Shredded mozzarella cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 cups Marinara sauce

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cook the lasagna noodles according to the package instructions until al dente. Drain, rinse with cold water, and lay flat on a towel.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Add the fresh spinach to the skillet and cook, stirring constantly, until wilted, about 3-4 minutes. Remove from heat and let it cool slightly.

In a large bowl, combine ricotta cheese, cooked spinach (make sure to drain any excess liquid), egg, parmesan cheese, salt, and black pepper. Mix until well combined.

Spread 1 cup of marinara sauce over the bottom of a 9x13 inch baking dish.
