  • 12 pieces Lasagna noodles
  • 2 tablespoons Olive oil
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic, minced
  • 28 ounces Crushed tomatoes
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 16 ounces Fresh spinach, chopped
  • 16 ounces Ricotta cheese
  • 1 Egg
  • 0.25 teaspoons Nutmeg
  • 0.5 cups Parmesan cheese, grated
  • 2 cups Mozzarella cheese, shredded

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Cook the lasagna noodles according to the package instructions, then drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute.

Stir in the crushed tomatoes, tomato paste, dried basil, oregano, 1 teaspoon of salt, and black pepper. Simmer for 10 minutes, stirring occasionally, then remove from heat.

Repeat this layering process two more times, ending with a layer of sauce and mozzarella cheese on top.

Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
