Ingredients

  • 2 cups black beans
  • 2 tablespoons olive oil
  • 1 medium yellow onion
  • 2 large garlic cloves
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 medium lime
  • 8 corn tortillas
  • 2 cups shredded lettuce
  • 1 cup diced tomatoes
  • 0.5 cup sour cream
  • 1 cup shredded cheddar cheese
  • 0.25 cup fresh cilantro
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 small jalapeño (optional)

Directions

Step 1

Drain and rinse the black beans thoroughly under cold water.

Step 2

Dice the yellow onion and mince the garlic cloves.

Step 3

Heat olive oil in a large skillet over medium heat.

Step 4

Add the diced onion to the skillet and sauté for 3-4 minutes, or until softened.

Step 5

Stir in the minced garlic, ground cumin, chili powder, and smoked paprika, and cook for 1 minute until fragrant.

Step 6

Add the black beans to the skillet along with salt and black pepper. Stir to combine and cook for 5-7 minutes, stirring occasionally.

Step 7

While the beans are cooking, warm the corn tortillas on a hot skillet or in the oven until they are pliable.

Step 8

Cut the lime into wedges. Once the beans are cooked, squeeze the juice from half of the lime over the beans and stir. Set the other lime wedges aside for serving.

Step 9

Assemble the tacos by placing a layer of black beans onto each warm tortilla.

Step 10

Top the beans with shredded lettuce, diced tomatoes, shredded cheddar cheese, sour cream, and fresh cilantro. Add finely diced jalapeño if desired for heat.

Step 11

Serve immediately with lime wedges on the side for extra zing.
