Ingredients

  • 450 grams All-purpose flour
  • 250 milliliters Warm water
  • 1 teaspoon Active dry yeast
  • 1 teaspoon Granulated sugar
  • 1.5 teaspoons Salt
  • 2 tablespoons Vegetable oil
  • 30 grams Butter (optional, for serving)

Directions

Step 1

In a small bowl, combine the warm water, active dry yeast, and sugar. Stir and let the mixture sit for 5-10 minutes until it becomes frothy.

Step 2

In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and vegetable oil.

Step 3

Mix the ingredients together with a spoon or your hands until a rough dough forms.

Step 4

Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until the dough becomes smooth and elastic. If the dough is too sticky, add a little more flour, 1 tablespoon at a time.

Step 5

Place the dough in a lightly oiled bowl, cover it with a clean kitchen towel, and allow it to rise in a warm place for about 1 hour or until it has doubled in size.

Step 6

Punch down the dough to release the air. Divide it into 8 equal portions and shape each portion into a ball.

Step 7

On a lightly floured surface, roll out each dough ball into a thin circle, about 5-6 inches in diameter.

Step 8

Heat a dry skillet or cast-iron pan over medium heat. Cook each flatbread one at a time for 2-3 minutes on each side, or until golden brown spots appear. Adjust the heat as needed to prevent burning.

Step 9

Stack the cooked flatbreads on a plate and cover them with a clean towel to keep them warm and soft.

Step 10

Serve the Lapyoshka flatbreads warm with a pat of butter, or alongside soups, stews, or other dishes as desired.
