Ingredients

  • 400 grams Udon noodles
  • 250 grams Raw prawns (peeled and deveined)
  • 3 tablespoons Soy sauce
  • 2 tablespoons Oyster sauce
  • 1 tablespoon Sesame oil
  • 2 tablespoons Vegetable oil
  • 3 cloves Garlic cloves (minced)
  • 1 teaspoon Ginger (grated)
  • 1 medium Carrot (julienned)
  • 1 medium Red bell pepper (sliced thinly)
  • 2 stalks Spring onions (sliced thinly)
  • 2 cups Baby spinach leaves
  • 0.5 teaspoon Chili flakes (optional)
  • 2 tablespoons Water

Directions

Step 1

Cook the udon noodles according to the package instructions. Drain and rinse with cold water to prevent sticking. Set aside.

Step 2

In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, and water. Set the sauce aside.

Step 3

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.

Add the prawns to the hot oil and stir-fry for 2-3 minutes until they turn pink and are cooked through. Remove the prawns from the wok and set them aside.
