Directions

Step 1

Trim the boneless chicken thighs and cut them into bite-sized pieces. Set aside.

Prepare the aromatic paste: finely chop the lemongrass, garlic cloves, shallots, and bird's eye chilies. Pound them together using a mortar and pestle until you achieve a rough paste. Alternatively, you can blend the ingredients using a food processor.
