  • 1 piece Bird's eye chili or red chili

  • 2 tablespoons Fresh cilantro leaves
  • 1 teaspoon Toasted ground rice (optional)

Directions

Step 1

Peel the garlic clove and finely mince or crush it into a paste using a mortar and pestle.

Step 2

Finely chop the bird's eye chili (include seeds for extra heat) and add it to the mortar. If you don't have a mortar, you can mince both garlic and chili with a knife.

Step 3

Peel and thinly slice the shallot. Mince it finely and add it to the mixture.

Step 4

In a small bowl, combine the fish sauce, lime juice, sugar, and water. Stir until the sugar is completely dissolved.

Step 5

Add the garlic, chili, and shallots to the bowl. Mix thoroughly to combine all the flavors.
