Ingredients

  • 4 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 0.5 cup yellow onion
  • 0.5 cup green bell pepper
  • 0.25 cup celery
  • 2 cloves garlic
  • 0.5 cup dry white wine
  • 1 cup seafood stock or chicken stock
  • 0.75 cup heavy cream
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon lemon juice
  • 0.5 cup lump crab meat (optional)
  • 2 tablespoons fresh parsley
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

In a medium saucepan, melt the butter over medium heat.

Step 2

Add the flour and whisk constantly to create a roux. Cook for 1-2 minutes until the mixture turns a light golden brown.

Step 3

Stir in the onion, green bell pepper, and celery. Cook for 4-5 minutes until the vegetables are softened.

Step 4

Add the minced garlic and cook for another 30 seconds until fragrant.

Step 5

Pour in the white wine and stir, deglazing the pan. Allow the wine to reduce by half, about 2-3 minutes.

Step 6

Slowly add the seafood stock (or chicken stock) while whisking to prevent lumps. Bring the mixture to a simmer.

Step 7

Stir in the heavy cream, Cajun seasoning, Worcestershire sauce, and lemon juice. Simmer for 5-7 minutes until the sauce thickens slightly.

Step 8

If using crab meat, gently fold it into the sauce and cook for another 2 minutes to warm through.

Step 9

Season with salt and black pepper to taste.

Step 10

Remove from heat and garnish with fresh parsley.

Step 11

Serve warm over your choice of seafood, chicken, or steak. Enjoy!
