  • 800 grams lamb shoulder (boneless, diced)
  • 2 tablespoons flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons butter
  • 2 medium onions (sliced)
  • 3 medium carrots (sliced)
  • 500 milliliters beef or lamb stock
  • 1 tablespoon Worcestershire sauce
  • 800 grams Potatoes (waxier varieties like Yukon Gold, peeled and thinly sliced)
  • 1 teaspoon thyme (fresh or dried)

Directions

Step 1

Preheat your oven to 170°C (150°C fan) or 340°F.

Step 2

Season the diced lamb shoulder with salt and pepper, then toss it with the flour to coat evenly.

Step 3

Heat the butter in a large, heavy-bottomed casserole dish over medium-high heat. Add the lamb in batches and brown it on all sides, then remove to a plate.

In the same dish, lower the heat and sauté the onions and carrots until softened, about 5 minutes.
