Ingredients

  • 4 cups canned navy beans
  • 1.5 cups pineapple chunks (canned or fresh)
  • 1 cup coconut milk
  • 0.25 cup brown sugar
  • 0.5 cup ketchup
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon ground ginger
  • 1 teaspoon garlic powder
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 slices bacon (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

If using bacon, cook the slices in a skillet over medium heat until crisp. Remove the bacon, crumble into small pieces, and set aside. Reserve 1 tablespoon of the bacon drippings.

Step 3

In a large mixing bowl, combine the navy beans, pineapple chunks, coconut milk, brown sugar, ketchup, soy sauce, apple cider vinegar, ground ginger, garlic powder, smoked paprika, salt, and black pepper. Mix well to evenly coat the beans and distribute the flavors.

Step 4

If bacon drippings are available, stir them into the mixture for added depth of flavor.

Step 5

Pour the bean mixture into a 9x13-inch baking dish and spread it evenly.

Step 6

Sprinkle the crumbled bacon on top if using.

Step 7

Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.

Step 8

Remove the foil and bake for an additional 15 minutes to allow the top to caramelize slightly.

Step 9

Remove the beans from the oven and let them cool for 5-10 minutes before serving.

Step 10

Serve warm as a side dish or spooned over grilled meats for a complete tropical-inspired meal.
