Ingredients

  • 2 cups dried green split peas
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 pieces celery stalks, diced
  • 3 medium carrots, diced
  • 3 pieces garlic cloves, minced
  • 1 piece smoked ham hock or smoked turkey leg
  • 8 cups vegetable broth or chicken broth
  • 2 pieces bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Rinse the dried split peas under cold water and pick out any debris or stones. Set aside.

Step 2

In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium heat.

Step 3

Add the diced onion, celery, and carrots to the pot. Sauté for 5-7 minutes until the vegetables are soft and the onions are translucent.

Step 4

Stir in the minced garlic and cook for an additional minute until fragrant.

Step 5

Add the rinsed split peas, the smoked ham hock or smoked turkey leg, vegetable or chicken broth, bay leaves, and dried thyme to the pot.

Step 6

Season the mixture with salt and black pepper. Stir well to combine.

Step 7

Increase the heat to bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid.

Step 8

Simmer the soup gently for 75-90 minutes, stirring occasionally, until the peas have broken down and the soup has thickened.

Step 9

Remove the smoked ham hock or turkey leg from the pot. Shred any meat from the bone and return the meat to the soup, discarding the bone.

Step 10

Taste the soup and adjust seasoning with additional salt or pepper if necessary.

Step 11

If desired, use an immersion blender to partially blend the soup for a creamier texture, leaving some chunks for a hearty feel.

Step 12

Ladle the soup into bowls, garnish with freshly chopped parsley if desired, and serve hot with crusty bread on the side.
