  • 3 bars Cherry Ripe chocolate bars

  • 250 milliliters Hot water
  • 250 milliliters Cold water
  • 500 milliliters Custard (store-bought or homemade)
  • 300 milliliters Thickened cream
  • 2 tablespoons Icing sugar
  • 1 teaspoon Vanilla extract
  • 50 grams Grated dark chocolate
  • 30 grams Shredded coconut

Directions

Step 1

Prepare the raspberry jelly according to the package instructions: dissolve the jelly crystals in 250ml of hot water, then stir in 250ml of cold water. Pour the jelly mixture into a shallow dish and refrigerate for 2-3 hours until set.

Slice the lamingtons into bite-sized cubes and set aside.

Chop the Cherry Ripe bars into small pieces and set aside.
