Ingredients

  • 2 pounds lamb shoulder (bone-in or boneless)
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground cinnamon
  • 1 teaspoon paprika
  • 2 tablespoons lemon juice
  • 2 fresh rosemary sprigs
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup water

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Pat the lamb shoulder dry with paper towels, then season it all over with salt and black pepper.

Step 3

In a small bowl, whisk together honey, olive oil, garlic, cumin, cinnamon, paprika, and lemon juice.

Step 4

Place the lamb in a large ovenproof roasting dish, and pour the honey mixture evenly over the lamb.

Step 5

Add the rosemary sprigs to the dish, and pour 1/2 cup of water around the lamb to keep it moist during cooking.

Step 6

Cover the roasting dish tightly with aluminum foil and place it in the oven.

Step 7

Roast in the oven for 1 hour. After the first hour, remove the foil and baste the lamb with the juices from the bottom of the dish.

Step 8

Return the lamb to the oven uncovered and roast for another 30 minutes, or until the meat is tender and caramelized on the outside.

Step 9

Remove the lamb from the oven and let it rest for 10 minutes before carving.

Step 10

Serve the lamb with the pan juices drizzled on top, alongside your favorite sides like roasted vegetables or rice.
