Ingredients

  • 1 kg lamb shoulder, cubed
  • 2 tbsp olive oil
  • 2 medium onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 0.5 tsp turmeric powder
  • 0.25 tsp cayenne pepper (optional)
  • 500 ml chicken or beef stock
  • 400 g canned chopped tomatoes
  • 150 g dates, pitted and halved
  • 50 g blanched almonds, toasted
  • 1 tbsp honey
  • 2 tbsp fresh coriander (cilantro), chopped
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Heat 2 tablespoons of olive oil in a large tajine or heavy-bottomed pot over medium heat.

Step 2

Season the lamb cubes with salt and black pepper, then brown them in batches in the hot oil until golden on all sides. Remove and set aside.

Step 3

In the same pot, add the chopped onions and cook for 5–7 minutes until softened and slightly golden.

Step 4

Add the minced garlic and cook for another minute until fragrant.

Step 5

Stir in the cinnamon, ginger, cumin, coriander, turmeric, and cayenne pepper (if using). Cook for 1–2 minutes to toast the spices and release their aroma.

Step 6

Return the browned lamb to the pot and mix well to coat the meat with the spices.

Step 7

Pour in the stock and canned tomatoes, stirring to combine. Bring the mixture to a gentle simmer.

Step 8

Cover the tajine or pot with a lid and reduce the heat to low. Allow it to simmer gently for 1.5 hours, stirring occasionally.

Step 9

After 1.5 hours, add the dates, honey, and toasted almonds to the pot. Stir well and simmer for an additional 20 minutes, uncovered, until the sauce thickens slightly and the lamb is tender.

Step 10

Taste and adjust seasoning with more salt or pepper if needed.

Step 11

Garnish with freshly chopped coriander before serving.

Serve hot with fluffy couscous, steamed rice, or warm flatbread.
