Ingredients

  • 1.5 kg lamb shoulder, cut into chunks
  • 500 g pearl onions, peeled
  • 4 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 cinnamon stick
  • 2 bay leaves
  • 5 allspice berries
  • 2 tbsp tomato paste
  • 400 g canned chopped tomatoes
  • 250 ml red wine
  • 2 tbsp red wine vinegar
  • 1 tbsp honey
  • 250 ml beef or lamb stock
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Heat 2 tablespoons of olive oil in a large, heavy-bottomed pot over medium-high heat.

Step 2

Season the lamb chunks with salt and pepper, then brown them in batches for 4-5 minutes until caramelized. Remove the lamb from the pot and set aside.

Step 3

In the same pot, add the remaining 2 tablespoons of olive oil and sauté the peeled pearl onions for 6-8 minutes, stirring occasionally, until they are golden brown.

Add the minced garlic and sauté for 1 additional minute until fragrant.

Stir in the cinnamon stick, bay leaves, and allspice berries, and cook for 30 seconds to release their aromas.
