Ingredients

  • 4 pieces lamb steaks
  • 2 tablespoons olive oil
  • 4 pieces garlic cloves
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 2 tablespoons unsalted butter
  • 1 teaspoon salt
  • 1 teaspoon black pepper, freshly ground
  • 0.25 cup dry white wine or chicken stock (optional)

Directions

Step 1

Take the lamb steaks out of the refrigerator and let them come to room temperature, approximately 20-30 minutes before cooking.

Step 2

Pat the lamb steaks dry with paper towels. Season both sides generously with salt and freshly ground black pepper.

Step 3

Heat olive oil in a large skillet over medium-high heat until it shimmers.

Step 4

Gently smash the garlic cloves with the side of a knife to release their flavor but keep them mostly intact.

Add the lamb steaks to the skillet and sear for 3-4 minutes on each side, depending on the thickness of the steaks and your preferred level of doneness.
