Ingredients

  • 4 pieces lamb shoulder chops
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3 tablespoons olive oil
  • 4 cloves garlic cloves, minced
  • 0.5 teaspoon red chili flakes
  • 28 ounces canned crushed tomatoes
  • 1 teaspoon dried oregano
  • 0.25 cup fresh basil leaves, chopped
  • 2 tablespoons capers, rinsed
  • 0.5 cup black or Kalamata olives, pitted and halved
  • 0.5 cup chicken or vegetable stock

Directions

Step 1

Season the lamb shoulder chops on both sides with salt and black pepper.

Step 2

Heat 2 tablespoons of olive oil in a large skillet or sauté pan over medium-high heat.

Step 3

Sear the lamb shoulder chops for 3-4 minutes on each side until golden brown. Remove the chops from the pan and set aside.

Step 4

Reduce the heat to medium and add the remaining tablespoon of olive oil to the same pan. Add the minced garlic and red chili flakes, cooking for 1 minute until fragrant.

Step 5

Pour in the crushed tomatoes and stir in the oregano. Let the mixture simmer for 5 minutes to develop the flavors.

Step 6

Add the basil leaves, capers, olives, and chicken or vegetable stock. Stir to combine and return the seared lamb chops to the pan, nestling them into the sauce.

Step 7

Cover the pan with a lid, reduce the heat to low, and simmer for 30-35 minutes, occasionally spooning the sauce over the chops. The lamb should be tender and fully cooked.

Step 8

Taste the sauce and adjust seasoning with additional salt or pepper if needed.

Step 9

Serve the lamb shoulder chops pizzaiola hot with crusty bread, pasta, or a side of your choice.
