Ingredients

  • 700 g Lamb shoulder (boneless, cubed)
  • 120 ml Greek yogurt
  • 2 tbsp Olive oil
  • 4 cloves Garlic cloves (minced)
  • 2 tbsp Lemon juice
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 1 tsp Paprika
  • 0.5 tsp Ground cinnamon
  • 3 tbsp Fresh parsley (finely chopped)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 large Bell peppers (cut into 2-inch pieces)
  • 1 large Red onion (cut into wedges)
  • 10 Wooden skewers or metal skewers

Directions

Step 1

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning while grilling.

Step 2

In a large mixing bowl, combine Greek yogurt, olive oil, minced garlic, lemon juice, ground cumin, ground coriander, paprika, ground cinnamon, chopped parsley, salt, and black pepper. Mix well to create the marinade.

Step 3

Add the cubed lamb to the marinade and mix until all pieces are evenly coated. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 2 hours, preferably overnight for maximum flavor.

Step 4

Preheat your grill or grill pan over medium-high heat.

Step 5

Assemble the skewers by threading the marinated lamb cubes, bell peppers, and red onion wedges alternately onto the skewers until all ingredients are used.

Step 6

Place the skewers on the preheated grill and cook for about 10-15 minutes, turning occasionally, until the lamb is cooked to your desired level of doneness and the vegetables are slightly charred.

Step 7

Remove the skewers from the grill and let them rest for a few minutes before serving.

Step 8

Serve the lamb shish kebabs with warm pita bread, a side of rice, or a fresh salad. Garnish with additional chopped parsley if desired.
