Ingredients

  • 2 pounds Boneless leg of lamb, trimmed and cut into 1.5-inch cubes
  • 1 large Red onion, cut into 1.5-inch pieces
  • 2 large Bell peppers (any color), cut into 1.5-inch pieces
  • 0.25 cup Olive oil
  • 2 tablespoons Lemon juice, freshly squeezed
  • 0.25 cup Plain Greek yogurt
  • 3 cloves Garlic cloves, minced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Paprika
  • 0.5 teaspoon Ground cinnamon
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Chopped fresh parsley (optional, for garnish)
  • 8 pieces Skewers (metal or wooden)

Directions

Step 1

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

Step 2

In a large mixing bowl, combine olive oil, lemon juice, yogurt, garlic, cumin, coriander, paprika, cinnamon, salt, and black pepper to create the marinade.

Step 3

Add the lamb cubes to the marinade and toss until well coated. Cover the bowl and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to penetrate the meat.

Step 4

When ready to cook, preheat your grill or grill pan to medium-high heat.

Step 5

Assemble the kabobs by threading the marinated lamb cubes, onion pieces, and bell pepper pieces onto the skewers, alternating between ingredients.

Step 6

Brush the skewers lightly with additional olive oil to prevent sticking.

Step 7

Place the skewers on the grill and cook for 10-12 minutes, turning every 2-3 minutes, until the lamb is browned on the outside and reaches your desired level of doneness (medium-rare is approximately 145°F/63°C internal temperature).

Step 8

Remove the kabobs from the grill and let them rest for 5 minutes to allow the juices to redistribute.

Step 9

Garnish with chopped fresh parsley (optional) and serve immediately with rice, pita bread, or a fresh salad.
