  • 4 fresh thyme sprigs
  • 2 bay leaves
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Season the lamb shanks with salt and pepper on all sides, then dust them lightly with flour.

In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat. Sear the lamb shanks on all sides until browned, about 4-5 minutes per side. Remove the shanks and set aside.
