Ingredients

  • 4 lamb shanks

  • 2 tsp ground coriander
  • 1 tsp turmeric powder
  • 1 tsp chili powder
  • 0.5 tsp ground cinnamon
  • 2 tbsp tomato puree
  • 400 grams canned diced tomatoes
  • 2 cups beef or lamb stock
  • 4 medium yukon gold potatoes, peeled and chopped
  • 2 tbsp fresh cilantro, chopped
  • 0.25 cup plain yogurt (optional, for garnish)

Directions

Step 1

Season the lamb shanks with 1 teaspoon of salt and 1 teaspoon of black pepper.

Step 2

Heat 2 tablespoons of vegetable oil in a large, heavy-bottomed pot over medium-high heat. Add the lamb shanks and sear them on all sides until browned. Remove and set aside.

Add the remaining 1 tablespoon of oil to the pot. Stir in the onions and cook until softened and golden brown, about 8-10 minutes.

Add the chopped potatoes to the pot. Cover again and continue simmering for an additional 45-60 minutes, or until the lamb shanks are tender and falling off the bone, and the potatoes are cooked through.

Taste the curry and adjust seasoning with the remaining 1 teaspoon of salt, if needed.
