Ingredients

  • 500 g Ground lamb
  • 60 g Breadcrumbs
  • 2 tbsp Fresh parsley, chopped
  • 2 cloves Garlic, minced
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 0.5 tsp Ground cinnamon
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 large Egg, beaten
  • 2 tbsp Olive oil
  • 250 ml Pomegranate juice
  • 2 tbsp Honey
  • 1 tbsp Lemon juice
  • 1 tsp Cornstarch
  • 1 tbsp Water
  • 2 tbsp Pomegranate seeds
  • 1 tbsp Fresh mint, chopped

Directions

Step 1

In a large mixing bowl, combine ground lamb, breadcrumbs, parsley, garlic, cumin, coriander, cinnamon, salt, pepper, and the beaten egg. Mix until everything is well incorporated.

Step 2

Using your hands, shape the mixture into small meatballs, about 2 tablespoons each. You should end up with approximately 20-24 meatballs.

Step 3

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the meatballs, spacing them out, and cook until browned on all sides and cooked through, about 10-12 minutes. Transfer the cooked meatballs to a plate and set aside.
