Ingredients

  • 500 grams ground lamb
  • 1 medium (finely grated) onion
  • 3 minced garlic cloves
  • 30 grams fresh mint leaves
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground paprika
  • 0.5 teaspoon crushed red chili flakes
  • 2 tablespoons plain yogurt
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 8 pieces (soaked in water for 30 minutes) wooden skewers

Directions

Step 1

In a large mixing bowl, combine the ground lamb, finely grated onion, minced garlic, and yogurt.

Step 2

Finely chop the fresh mint leaves and add them to the bowl along with the ground cumin, coriander, paprika, crushed red chili flakes, salt, and black pepper.

Step 3

Using clean hands or a spoon, thoroughly mix the ingredients until well incorporated. Cover the bowl and let the mixture marinate in the refrigerator for at least 1 hour (or up to overnight for deeper flavor).

Step 4

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during cooking.

Step 5

Once the mixture is marinated, divide it into 8 equal portions. Using your hands, shape each portion into a long sausage-like shape around a skewer, pressing gently to ensure it adheres well.

Step 6

Preheat a grill, grill pan, or broiler to medium-high heat. Lightly brush the grill grates or pan with olive oil to prevent sticking.

Step 7

Place the kebabs on the grill or under the broiler and cook for about 12-15 minutes, turning occasionally, until the lamb is cooked through and slightly charred on all sides.

Step 8

Remove the kebabs from the heat and let them rest for a few minutes before serving.

Step 9

Serve the lamb kebabs hot, garnished with additional fresh mint if desired, alongside flatbreads, a side salad, or your favorite dipping sauces.
