Ingredients

  • 500 grams ground lamb
  • 1 medium, finely grated onion
  • 3 cloves, minced garlic
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon paprika
  • 0.5 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons, finely chopped fresh parsley
  • 200 grams plain Greek yogurt
  • 3 tablespoons, finely chopped fresh coriander (cilantro)
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 6 skewers wooden or metal skewers

Directions

Step 1

In a mixing bowl, combine the ground lamb, grated onion, minced garlic, ground cumin, ground coriander, paprika, ground cinnamon, salt, black pepper, and chopped parsley. Mix thoroughly with your hands until the mixture is evenly combined.

Step 2

Divide the lamb mixture into 6 equal portions. Shape each portion into a sausage-like cylinder around a skewer if using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning. Place the formed kebabs on a plate or tray.

Step 3

Preheat your grill, grill pan, or skillet to medium-high heat. Brush with a small amount of olive oil to prevent sticking.

Step 4

Cook the lamb kebabs for about 2-3 minutes on each side, or until they are nicely browned and cooked through. Turn them gently using tongs to ensure even cooking.

Step 5

While the kebabs are cooking, prepare the coriander yogurt sauce. In a small bowl, mix the Greek yogurt, chopped coriander, lemon juice, and a pinch of salt. Stir until smooth and well combined.

Step 6

Once the kebabs are cooked, remove them from the heat and let them rest for a couple of minutes.

Step 7

Serve the kebabs hot with the coriander yogurt sauce on the side. Optionally, garnish with additional chopped parsley or coriander, and serve with flatbreads, rice, or a fresh salad.
