Ingredients

  • 500 grams ground lamb
  • 1 medium onion
  • 3 garlic cloves
  • 2 teaspoons oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh parsley
  • 1 tablespoon lemon juice
  • 1 cup plain yogurt
  • 1 tablespoon dill
  • 0.5 cup cucumber
  • 4 pita bread
  • 1 large tomato
  • 0.5 red onion
  • 4 lettuce leaves

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Grate the onion using a food processor or a grater. Transfer to a bowl and set aside.

Step 3

In a large mixing bowl, combine ground lamb, grated onion, minced garlic cloves, oregano, ground cumin, ground coriander, salt, pepper, and fresh parsley.

Step 4

Mix the ingredients well until thoroughly combined.

Step 5

Line a loaf pan with parchment paper. Press the lamb mixture into the pan firmly to compact it.

Step 6

Bake the lamb mixture in the preheated oven for about 40-45 minutes until cooked through.

Step 7

While the lamb is cooking, make the yogurt sauce. In a small bowl, combine plain yogurt, chopped dill, lemon juice, and grated cucumber. Mix well and refrigerate until ready to use.

Step 8

Once the lamb is cooked, allow it to rest for about 10 minutes. Then, thinly slice it into strips.

Step 9

Warm the pita bread in a pan or oven for a few minutes to make it pliable.

Step 10

Assemble the gyros: place some lettuce leaves on the pita, followed by slices of lamb, sliced tomato, and sliced red onion.

Step 11

Drizzle the yogurt sauce over the top.

Step 12

Roll up the pita around the fillings and serve immediately.
