Ingredients

  • 8 pieces lamb chops
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 3 tablespoons olive oil
  • 4 pieces garlic cloves, minced
  • 1 teaspoon fresh rosemary, chopped
  • 2 cups canned white beans, drained and rinsed
  • 1 cup chicken stock
  • 1 tablespoon lemon juice
  • 0.25 teaspoon red pepper flakes
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Season the lamb chops on both sides with 1 teaspoon of salt and 1 teaspoon of black pepper. Set aside to come to room temperature while you prepare the other ingredients.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. When the oil is shimmering, add the lamb chops and sear for 3-4 minutes on each side, until golden brown and cooked to your desired doneness. Remove from the skillet and cover with foil to keep warm.

Step 3

In the same skillet, lower the heat to medium and add the remaining tablespoon of olive oil. Add the minced garlic and sauté for 1 minute, or until fragrant. Stir in the chopped rosemary and cook for another 30 seconds.
