Ingredients

  • 8 pieces lamb chops
  • 2 tablespoons olive oil

  • 3 pieces egg yolks
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh mint leaves (finely chopped)
  • 2 tablespoons water

Directions

Step 1

Take the lamb chops out of the refrigerator and allow them to come to room temperature, approximately 20 minutes before cooking.

Preheat a grill pan or skillet over medium-high heat. Brush both sides of the lamb chops with olive oil and season with salt and black pepper.

Cook the lamb chops for 3-4 minutes on each side for medium-rare, or until they reach your desired level of doneness. Remove the chops from the heat, cover loosely with foil, and let them rest while you prepare the sauce.
