Ingredients

  • 8 pieces lamb chops
  • 4 whole mandarins
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon fresh rosemary
  • 2 cloves garlic cloves
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon butter
  • 2 tablespoons optional garnish: fresh parsley

Directions

Step 1

Zest one of the mandarins and then juice all four mandarins into a bowl. Set the zest and juice aside for later.

Step 2

Pat the lamb chops dry with paper towels and season both sides with salt and black pepper.

Step 3

Mince the garlic and rosemary and combine them in a small bowl. Rub this mixture onto both sides of the lamb chops.

Step 4

Heat a large skillet over medium-high heat and add the olive oil. Sear the lamb chops for 2-3 minutes on each side until they are golden brown. Remove the chops from the skillet and set aside on a plate.
