Ingredients

  • 8 pieces lamb chops
  • 2 tablespoons extra virgin olive oil
  • 3 pieces garlic cloves
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 1 cup plain Greek yogurt
  • 2 tablespoons fresh parsley
  • 2 tablespoons fresh mint
  • 2 tablespoons lemon juice
  • 1 cup couscous
  • 1.25 cups chicken or vegetable broth
  • 1 tablespoon butter

Directions

Step 1

Prepare the lamb marinade by combining 2 tablespoons of olive oil, minced garlic cloves, ground cumin, ground coriander, paprika, kosher salt, and black pepper in a small bowl. Mix well and rub the mixture evenly over the lamb chops.

Step 2

Cover and marinate the lamb chops for at least 30 minutes at room temperature or up to 8 hours in the refrigerator.

Step 3

To make the herbed yogurt, combine the plain Greek yogurt, chopped fresh parsley, chopped fresh mint, and lemon juice in a bowl. Mix well, cover, and refrigerate until ready to serve.

Step 4

In a medium saucepan, bring the chicken or vegetable broth to a boil. Stir in the couscous, cover, and remove the saucepan from heat. Let it sit for 5 minutes, then fluff the couscous with a fork and stir in the butter.

Step 5

Heat a large skillet or grill pan over medium-high heat. Cook the lamb chops for 3-4 minutes per side for medium-rare, or adjust cooking time for desired doneness.

Step 6

To serve, place a scoop of couscous onto each plate, top with two lamb chops, and drizzle the herbed yogurt over the chops. Garnish with additional parsley or mint if desired.
