Ingredients

  • 500 g lamb (boneless, cut into bite-sized pieces)

  • 1 medium tomato (finely chopped)
  • 4 cloves garlic (minced)
  • 1 tbsp ginger (minced)
  • 2 green chilies (sliced)
  • 0.5 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 0.5 tsp garam masala
  • 0.5 tsp fenugreek seeds
  • 2 tbsp fresh cilantro (chopped)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 cup water

Directions

Step 1

Heat 2 tablespoons of mustard oil in a large pan or wok over medium heat.

Step 2

Add the fenugreek seeds and fry them until they turn dark brown (about 30 seconds).

Step 3

Add the sliced onion and sauté until golden brown (5-7 minutes).

Step 4

Stir in the minced garlic, minced ginger, and sliced green chilies, and cook for another 1-2 minutes until fragrant.

Add the bite-sized lamb pieces to the pan. Cook on medium-high heat, stirring occasionally, until the lamb starts to brown (around 8-10 minutes).
