Ingredients

  • 500 g Ground lamb
  • 1 medium Brown onion, finely grated
  • 3 Garlic cloves, minced
  • 30 g Fresh parsley, chopped
  • 1.5 tsp Ground cumin
  • 1.5 tsp Ground coriander
  • 0.5 tsp Ground cinnamon
  • 1 tbsp Sumac
  • 0.5 tsp Chili flakes (optional)
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 1.5 tbsp Olive oil (for cooking)

Directions

Step 1

In a large mixing bowl, combine the ground lamb, grated onion, minced garlic, chopped parsley, ground cumin, ground coriander, ground cinnamon, sumac, chili flakes (if using), salt, and black pepper.

Step 2

Using clean hands, mix the ingredients thoroughly until well combined. This helps to evenly distribute the spices and ensures the koftas will hold together.

Step 3

Divide the mixture into 12 equal portions. Shape each portion into an oval or sausage-like shape, about 2-3 inches long. If using skewers, mold the meat around the skewer for easier handling.

Step 4

Place the koftas on a tray or plate, cover with plastic wrap, and refrigerate for at least 30 minutes. This step helps the flavors meld and prevents the koftas from falling apart during cooking.

Step 5

Heat a large non-stick skillet, grill pan, or barbecue over medium-high heat. Add the olive oil if pan-frying.

Step 6

Cook the koftas for about 3-4 minutes per side, turning carefully with tongs, until browned on all sides and cooked through. Be careful not to overcook as lamb can dry out quickly.

Step 7

Remove the koftas from the heat and let them rest for a couple of minutes before serving.

Step 8

Serve the lamb and sumac koftas with warm flatbreads, a dollop of yogurt or tzatziki, and a side of fresh salad or pickled vegetables. Enjoy!
