Ingredients

  • 1 lb boneless lamb shoulder

  • 1 tsp paprika
  • 2 tbsp tomato paste
  • 14 oz diced tomatoes
  • 4 cups chicken or beef broth
  • 1 cup spelt farro
  • 1 lb green beans, trimmed and halved
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice

Directions

Step 1

Season the lamb shoulder with 1 tsp of salt and 0.5 tsp black pepper.

Step 2

Heat 1 tbsp olive oil in a large heavy-bottomed pot over medium-high heat. Sear the lamb on all sides until browned, about 4-5 minutes. Remove and set aside.

Step 3

Reduce the heat to medium, add the remaining 1 tbsp olive oil, and sauté the diced onion until translucent, about 5 minutes.

Stir in the minced garlic and diced carrots. Cook for an additional 3 minutes.
