Ingredients

  • 200 grams Rice noodles
  • 400 ml Coconut milk
  • 500 ml Chicken stock
  • 200 grams Chicken breast, thinly sliced
  • 200 grams Shrimp, peeled and deveined
  • 100 grams Laksa paste
  • 2 tablespoons Oil
  • 100 grams Bean sprouts
  • 20 grams Fresh coriander leaves
  • 1 each Lime, cut into wedges
  • 1 tablespoon Fish sauce
  • 1 teaspoon Salt

Directions

Step 1

Soak the rice noodles in a bowl of warm water for about 10 minutes until they soften. Drain and set aside.

Step 2

Heat the oil in a large pot over medium heat. Add the laksa paste and stir-fry for about 2-3 minutes until fragrant.

Pour in the chicken stock and bring to a simmer. Stir in the coconut milk and bring the mixture to a gentle simmer again.
