Ingredients

  • 225 g unsalted butter, softened
  • 225 g caster sugar
  • 4 eggs, large
  • 225 g self-raising flour
  • 2 tbsp lemon zest (from 2 lemons)
  • 2 tbsp milk
  • 100 g icing sugar
  • 2 tbsp lemon juice (from 1 lemon)

Directions

Step 1

Preheat your oven to 180°C (160°C fan-assisted) or 350°F. Grease and line a 20cm (8-inch) round cake tin with baking paper.

Step 2

In a large mixing bowl, beat the softened butter and caster sugar together until pale and fluffy using a handheld or stand mixer.

Step 3

Add the eggs one at a time, mixing well after each addition. If the mixture begins to curdle, add a tablespoon of the self-raising flour to stabilize it.

Sift the self-raising flour into the bowl and gently fold it into the mixture until evenly combined. Be careful not to overmix to keep the batter light.

Fold in the lemon zest and milk, ensuring they are evenly distributed throughout the batter.
