Ingredients

  • 450 grams Shrimp (peeled and deveined)
  • 1 large Egg white
  • 2 teaspoons Cornstarch
  • 3 tablespoons Vegetable oil
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ginger (minced)
  • 1 medium Carrot (sliced into thin matchsticks)
  • 150 grams Snow peas (trimmed)
  • 2 stalks Green onion (sliced diagonally)
  • 120 milliliters Chicken broth
  • 2 tablespoons Soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 teaspoon Sugar
  • 0.25 teaspoon White pepper
  • 1 teaspoon Sesame oil

Directions

Step 1

Rinse the shrimp thoroughly under cold water and pat them dry with a paper towel.

Step 2

In a medium bowl, whisk together the egg white and cornstarch until smooth. Add the shrimp and gently toss until well coated. Set aside for 10 minutes to marinate.

Step 3

Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Stir-fry the shrimp in batches for 1-2 minutes, just until they turn pink. Remove from the pan and set aside.

Step 4

Add the remaining tablespoon of vegetable oil to the skillet. Stir-fry the garlic and ginger for 30 seconds, or until fragrant.

Step 5

Add the carrot and snow peas to the skillet and stir-fry for 2 minutes, or until the vegetables are crisp-tender.

Step 6

In a small bowl, combine the chicken broth, soy sauce, Shaoxing wine, sugar, and white pepper. Mix well and pour the sauce into the skillet.

Return the shrimp to the skillet and toss gently to coat in the sauce. Cook for an additional 2-3 minutes until the shrimp are fully cooked and heated through.

Step 8

Sprinkle with sesame oil and garnish with green onion slices before serving. Serve hot with steamed rice or noodles.
