Ingredients

  • 0.25 cup Olive oil
  • 3 tablespoons Soy sauce
  • 2 tablespoons Lime juice
  • 2 tablespoons Lemon juice
  • 1 tablespoon Worcestershire sauce
  • 3 cloves Garlic cloves (minced)
  • 2 tablespoons Honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Dried oregano
  • 0.25 teaspoon Crushed red pepper flakes
  • 4 filets Fresh wahoo filets

Directions

Step 1

In a medium-sized mixing bowl, combine the olive oil, soy sauce, lime juice, lemon juice, Worcestershire sauce, garlic, honey, Dijon mustard, black pepper, oregano, and red pepper flakes. Whisk until the marinade is well blended.

Step 2

Place the wahoo filets into a shallow dish or a resealable plastic bag.

Step 3

Pour the marinade over the wahoo filets, making sure each piece is fully coated.

Step 4

Cover the dish with plastic wrap or seal the bag, and refrigerate for 30 minutes to 1 hour. Avoid marinating for too long to prevent the citrus from 'cooking' the fish.

Step 5

When ready to cook, remove the wahoo filets from the marinade and discard any remaining marinade.

Step 6

Cook the fish as desired—grill, pan-sear, or bake—until the wahoo reaches an internal temperature of 145°F (63°C) and flakes easily with a fork.

Step 7

Serve immediately with your choice of sides, such as steamed vegetables, rice, or a fresh salad.
