Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 3 bell peppers (any color), diced
  • 1 cup uncooked white rice
  • 1 can diced tomatoes (14.5 oz can)
  • 1 can tomato sauce (8 oz can)
  • 2 cups beef broth
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Turn on the pressure cooker to 'Sauté' mode and heat the olive oil.

Step 2

Add the ground beef to the pressure cooker and cook until browned, breaking it up with a spoon as it cooks. Drain any excess grease if needed.

Step 3

Add the diced onion and minced garlic to the ground beef. Sauté for 2-3 minutes until the onion becomes translucent and fragrant.

Step 4

Stir in the diced bell peppers and cook for another 2 minutes.

Step 5

Add the uncooked white rice, diced tomatoes (with their juice), tomato sauce, beef broth, Italian seasoning, paprika, salt, and black pepper. Stir everything together to combine.

Step 6

Secure the lid on the pressure cooker and set the valve to the sealing position. Cook on high pressure for 8 minutes.

Step 7

Once the pressure cooker beeps, perform a quick release by carefully turning the valve to the venting position. When all the pressure has been released, open the lid.

Step 8

Stir the casserole to mix everything evenly. Taste and adjust the seasoning if needed.

Step 9

Sprinkle the shredded cheddar cheese over the top and close the lid (without turning on the pressure cooker) for 2-3 minutes to allow the cheese to melt.

Step 10

Serve the casserole warm, garnished with fresh parsley if desired.
