  • 500 grams all-purpose flour
  • 7 grams active dry yeast
  • 300 milliliters water
  • 30 milliliters olive oil
  • 10 grams salt
  • 500 grams ground lamb or beef
  • 1 large onion
  • 2 medium tomatoes
  • 1 medium red bell pepper
  • 3 large garlic cloves
  • 1 bunch parsley
  • 30 grams tomato paste
  • 5 grams paprika
  • 5 grams cumin
  • 5 grams black pepper
  • 5 grams salt

Directions

Step 1

In a large bowl, combine the flour and salt. In a separate small bowl, dissolve the yeast in warm water and let it sit for about 5-10 minutes until foamy.

Step 2

Make a well in the center of the flour mixture and add the yeast mixture and olive oil. Gradually mix the ingredients using a wooden spoon until it begins to come together.

Knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

While the dough is rising, prepare the topping. Finely chop the onion, tomatoes, red bell pepper, garlic, and parsley.

Carefully transfer the topped dough onto the preheated baking sheet and bake for about 7-8 minutes or until the edges of the dough are golden and crisp.

Repeat with the remaining dough and meat mixture. Serve the lahmajun hot, garnished with fresh parsley or a squeeze of lemon juice if desired.
