Begin by preparing the noodles. In a large bowl, combine 400 grams of all-purpose flour and 0.5 teaspoon of salt. Make a well in the center and add 1 beaten egg and 200 milliliters of water. Mix to form a dough.
Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Cover it with a damp cloth and let it rest for at least 30 minutes.
While the dough is resting, prepare the meat and vegetable broth. Cut 500 grams of beef into small cubes.
Heat 3 tablespoons of vegetable oil in a large pot over medium heat. Add the beef and cook until browned on all sides.
Finely chop 1 large onion and add it to the pot. Cook until the onion is softened and golden brown.
Peel and slice 1 large carrot, and chop 1 medium bell pepper. Add to the pot and cook for another 5 minutes.
Add 2 tablespoons of tomato paste and 3 minced garlic cloves to the pot. Stir well to combine and cook for 2 minutes.
Add 200 grams of shredded cabbage, and 2 peeled and diced medium potatoes, along with 1 teaspoon of cumin seeds and 0.5 teaspoon of black pepper to the pot.
Pour in 1 liter of broth or water. Bring to a boil, then reduce heat to low, cover, and simmer for 60 minutes until the meat and vegetables are tender.
Meanwhile, roll out the dough on a floured surface until very thin. Cut into long, thin strips to form noodles.
Bring a pot of salted water to a boil and cook the noodles until al dente, about 4-5 minutes. Drain and rinse under cold water.
To serve, place a portion of noodles in each bowl and ladle the meat and vegetable broth over them. Mix gently and enjoy your homemade Lagman!
