Ingredients

  • 2 pounds Ground beef (80% lean)
  • 0.5 pounds Ground pork
  • 1 cups Breadcrumbs
  • 0.5 cups Milk
  • 0.25 cups Grated Parmesan cheese
  • 2 large Eggs
  • 2 pieces Garlic cloves, minced
  • 1 medium Yellow onion, finely diced
  • 2 teaspoons Salt
  • 1 teaspoons Black pepper
  • 1 teaspoons Dried thyme
  • 0.5 cups Ketchup
  • 2 tablespoons Brown sugar
  • 1 teaspoons Mustard

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a small bowl, combine the breadcrumbs and milk. Let the mixture sit for 5 minutes to allow the breadcrumbs to absorb the liquid.

Step 3

In a large mixing bowl, combine the ground beef, ground pork, the breadcrumb mixture, grated Parmesan cheese, eggs, minced garlic, diced onion, salt, black pepper, and dried thyme.

Step 4

Mix the ingredients gently with your hands until just combined. Be careful not to overmix, as this can make the meatloaf dense.

Step 5

Transfer the meat mixture to a baking sheet or loaf pan and shape it into a loaf approximately 9 inches long and 4 inches wide.

Step 6

In a separate small bowl, whisk together the ketchup, brown sugar, and mustard to make the glaze.

Step 7

Spread about two-thirds of the glaze evenly over the top of the meatloaf, reserving the remaining glaze for later.

Step 8

Place the meatloaf in the preheated oven and bake for 45 minutes.

Step 9

Remove the meatloaf from the oven and spread the remaining glaze over the top. Return it to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C).

Step 10

Allow the meatloaf to rest for 10 minutes before slicing and serving. Enjoy!
