  • 6 ounces Salt pork

  • 4 cups Chicken broth
  • 2 cups Water
  • 1 cup Long grain white rice
  • 0.5 teaspoons Salt
  • 2 tablespoons (chopped, optional for garnish) Fresh parsley

Directions

Step 1

Rinse the lady peas under cool water and set aside.

Step 2

Cut the salt pork into small cubes (roughly 1/4 inch) and set aside.

Heat a large pot or Dutch oven over medium heat. Add the salt pork and cook until the fat renders and the edges are golden brown, about 5-7 minutes.

Add the diced onion to the pot and sauté in the rendered fat until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute.
