Ingredients

  • 4 pieces Boneless, skinless chicken thighs
  • 0.5 cup Orange marmalade
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Soy sauce
  • 2 pieces Garlic cloves, minced
  • 1 tablespoon Olive oil
  • 1 teaspoon Fresh rosemary, chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper, freshly ground
  • 0.25 cup Water
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a small bowl, whisk together the orange marmalade, Dijon mustard, soy sauce, minced garlic, chopped rosemary, and water. This will be the sauce for the chicken.

Step 3

Pat the chicken thighs dry with a paper towel and season both sides with salt and black pepper.

Step 4

In a large oven-safe skillet or cast-iron pan, heat the olive oil over medium-high heat.

Step 5

Place the chicken thighs in the skillet and sear for 2-3 minutes on each side, until golden brown. Remove the chicken temporarily from the skillet and set aside.

Step 6

Reduce the heat to medium and pour the orange marmalade mixture into the skillet. Let it simmer for 1-2 minutes, stirring constantly, until slightly thickened.

Step 7

Return the chicken thighs to the skillet, spooning some of the sauce over the top of each piece.

Step 8

Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).

Step 9

Remove the skillet from the oven and let the chicken rest for 5 minutes. The sauce will thicken slightly as it cools.

Step 10

Garnish the chicken with chopped parsley if desired, and serve with your choice of sides such as rice, roasted vegetables, or a fresh salad.
