Ingredients

  • 4 pieces Eggs (large, separated)
  • 100 grams Granulated sugar
  • 1 teaspoon Vanilla extract
  • 100 grams All-purpose flour
  • 20 grams Cornstarch
  • 30 grams Powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.

Separate the egg whites and yolks into two clean, large bowls.

Step 3

Using an electric hand mixer or stand mixer, whip the egg whites on medium speed until soft peaks form. Gradually add half of the granulated sugar (50g) while continuing to beat until stiff, glossy peaks are achieved. Set aside.

Step 4

In the second bowl, beat the egg yolks, remaining granulated sugar (50g), and vanilla extract until the mixture is pale and thick, about 2-3 minutes.

Step 5

Sift together the all-purpose flour and cornstarch. Gently fold one-third of the flour mixture into the yolk mixture to incorporate.

Using a spatula, carefully fold in one-third of the beaten egg whites to lighten the mixture. Alternate folding in the flour mixture and egg whites, a third at a time, until fully combined. Be careful not to deflate the batter.

Step 7

Transfer the batter into a piping bag fitted with a round or star tip (around 1/2 inch or 1.25 cm in diameter). Pipe 3-inch (7.5 cm) long strips onto the prepared baking sheets, leaving space between each.
