  • 0.5 cup Vegetable oil
  • 0.5 cup Sour cream

Directions

Step 1

Peel the Russet potatoes and grate them using the large holes of a box grater. Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible. Transfer to a large mixing bowl.

Step 2

Peel and grate the onion using the same box grater. Squeeze out any excess liquid and add the grated onion to the potatoes.

Step 3

Add the eggs, all-purpose flour, salt, black pepper, and finely chopped chives to the potato mixture. Mix well until fully combined.

Step 4

Heat vegetable oil in a large skillet over medium-high heat. The oil should be hot but not smoking. Test by dropping a small amount of the mixture into the skillet; it should sizzle immediately.
